Ingredients
4 servings
1onion
medium, chopped or sliced
¾ Tbsolive oil
1garlic clove
crushed
0.5red bell pepper
chopped
12baby Brussels sprouts
quartered
1carrot
medium, sliced thinly
1tomato
large, de-seeded and chopped
0.25courgette
large, diced
15gfusili pasta
1 ltrvegetable stock
1 pinchoregano
dried or a fresh sprig if you prefer
¼ tsptarragon
dried
Instructions
Step 1
Peel and thinly slice or chopped the onion. Sauté in the soup maker if you have that function or if not do it on the stove for around 5 minutes with the crushed garlic until smooth and glassy but before browning. Take off the heat.
Step 2
Quater the sprouts, dice the pepper, thinly slice the carrot, dice the courgette, de-seed and dice the tomato. Add to the soup maker.
Step 3
Add the pasta, stock and herbs and mix through. Season if needed. Set the soup maker to the chunky setting and it will be ready in around 30 minutes.
