Instructions
Step 1
Heat 1 tablespoon of olive oil in a medium pan, add garlic and sauté on low heat until fragrant but not brown about 2-3 minutes. Then add thyme, lemon zest, cumin and most of the beans. (But reserve about 1/4 cup of the beans).
Step 2
Continue to sauté on low heat for another 2-3 minutes, or until the garlic is very soft, then with a hand mixer, puree sautéed beans with 1 tablespoon of the lemon juice, 3 tbsp olive oil, 2 tbsp tahini and the reserved 1/4 cup of the bean liquid until smooth. (You may add more bean liquid if needed until you get the desired consistency).
Step 3
Taste and season with salt and pepper, add 1 tbsp lemon juice if isn't lemony enough, then transfer to the fridge for 30 minutes.
Step 4
To Serve; Scoop the Mutabbal into a serving bowl, top with the chopped mint leaves (or any green leave yiu like) add the reserved beans, and drizzle generously with olive oil.
Step 5
Enjoy it with pita bread, alongside any kind of colorful vegetables, such as cucumber, tomato, radish, bell pepper, green beans, etc...
