cut into 1-inch cubes
1 tablespooncornstarch
1 tablespoonsoy sauce
1 tablespoonrice wine
or sherry, optional
1 tablespoonoil
2 tablespoonsblack bean paste
fermented, douchi
2 tablespoonsSichuan chili bean paste
doubanjiang
1 teaspoonminced garlic
1 teaspoonminced ginger
¼ cupchicken broth
¼ cupwater
1 tablespooncornstarch
dissolved in 1 tablespoon water
¼ teaspoonSichuan peppercorns
ground
¼ teaspoonblack pepper
salt

Instructions
Step 1
n a medium bowl, combine the tofu, cornstarch, soy sauce, and rice wine (if using). Toss to coat.

Heat the oil in a large skillet or wok over medium-high heat.

Add the fermented black bean paste and Sichuan chili bean paste to the skillet and cook until fragrant, about 30 seconds.

Add the garlic and ginger to the skillet and cook until fragrant, about 30 seconds.

Add the chicken broth, water, and cornstarch slurry to the skillet. Bring to a boil, then reduce heat to low and simmer for 2 minutes, or until the sauce has thickened.

Add the tofu to the skillet and toss to coat in the sauce.

Season with Sichuan peppercorns, black pepper, and salt to taste.

Serve immediately with rice.
