Step 1
Heat the bone broth in a pot over medium high and bring to a boil. Add tomato paste (if using). Stir to combine, then turn off the heat but leave the pot on the stove.
Step 2
In a bowl, whisk the eggs. Slowly pour them into the steaming broth, whisking continuously. Season with salt and pepper, then stir the soup once more, cover the pot, and let sit for 30 seconds to a minute to cook the eggs.
Step 3
Pour the soup into a bowl, garnish with fresh parsley or cilantro and green onions, and drizzle with extra-virgin olive oil. Serve hot
