Step 1
Heat oven to 400°
Step 2
Grease a 9x13 casserole dish
Step 3
Scoop out cooked potato and transfer to a large bowl. Discard skins.
Step 4
Mix 1/2 the cheddar cheese, for cream, milk, butter, chives, garlic powder, salt and black pepper into potatoes until well combined.
Step 5
Spread potato mixture into the prepared casserole dish; top with remaining cheddar cheese and crumbled bacon
Step 6
Bake in preheated oven for 10 - 15 minutes.
Step 7
Recipe Tip: can be made ahead of time. Cover casserole with foil and bake in 350° oven for about 40 minutes.
