Instructions

Step 1
Grate the orange skin and set aside the peel. Squeeze the orange to obtain about 1/4 cup of juice. Set aside.

In a bowl, soak the raisins in hot water for 10 minutes. Drain them and combine with the figs and apricots in a medium sized bowl. Mix in the rum and fold in the chopped nuts. Set aside.

Meanwhile, take a medium size mixing bowl and, with an electric hand mixer, beat the eggs with the olive oil, vanilla extract, orange extract, and allspice to taste.

Mix in the orange juice, grated orange peel, the almond flour, and baking powder. Sweeten with the orange marmalade to taste.

Fold in the raisins, figs, apricots, and mixed nuts.

Spray a cake mold (roughly 9 inches long by 5 inches wide by 3 inches high) with olive oil and fill with the cake mixture.

Bake in a hot over at 340 degrees F (170 degrees C) for about 40 minutes, or until golden brown.
