Instructions

Trim and thinly slice mushrooms. Peel and mince or grate garlic. Trim and thinly slice scallions, separating whites from greens.

Cook Mushrooms

Heat a large drizzle of olive oil and 1 TBSP butter (2 TBSP for 4 servings) in a large pan over medium-high heat. Add mushrooms and cook, stirring occasionally, until golden brown and slightly crisp, 5-7 minutes. Season with salt and pepper. • Turn off heat; transfer to a small bowl. Wipe out pan.

Make Potatoes

While mushrooms are cooking, put on water to boil and cook potatoes according to package instructions. Cook one whole package, though only half will be needed for the meal.

Cook patties

Heat oil in cast iron grill pan over medium heat. Add 2 patties and cook both sides until done.

Cook Veg

While patties are cooking, cook bag of frozen veg in microwave according to instructions.

Make Sauce

Heat a drizzle of olive oil and 1 TBSP butter (2 TBSP for 4 servings) in same pan as used for the meat over medium-high heat. • Add garlic and scallion whites; cook until fragrant, 30 seconds. • Stir in ¼ cup water (1⁄3 cup for 4) and stock concentrate. • Bring to a simmer, then stir in mushrooms and any resting juices from meat; cook until slightly thickened, 1-2 minutes. • Remove pan from heat. Stir in sour cream until smooth. Season with salt and pepper.

Finish & Serve

Spoon sauce over meat. Garnish with scallion greens and serve.
