Instructions

Step 1
In a Large nonstick frying pan, melt 1 tbsp of the butter with the olive oil over medium-high heat. Add the bread cubes and season generously with salt and pepper. Toast the bread, allowing it to sit for a minute at a time before stirring, until golden brown, about 4 minutes total. Transfer the croutons to a plate. Do not wipe out the pan. In the same pan, melt the remaining 2 tbsp butter over medium-Low heat. Season the egg mixture with salt and pepper and pour into the pan. Cook without stirring for 1 minute. Using a rubber spatula, gently stir the eggs, allowing the uncooked eggs to run to the bottom of the pan. Cook until the eggs are mostly set, about 3 minutes, then stir in the cream cheese and dill. Continue to gently stir until the eggs are set, about 1 minute Longer. Divide the eggs among 4 plates, top with the croutons, and serve
