Grandma Goldie’s Matzah Balls
This is the recipe that my grandmother and my mother used, and it is the only one I use. It is very simplistic and I love that there is no oil in the recipe. This recipe usually comes out as floaters for me, but once in a blue moon they come out as sinkers. I get about 12 matzah balls out of this recipe. Luckily, I had a restaurant-sized stock pot as I usually tripled this recipe. My crowd loved my matzah balls and chicken soup so much, they would have 2-3 servings before the main course. I figure 2 matzah balls per person per serving.
MARILYN’S NOTES:
1. The more matzah meal you use, the heavier the matzah balls will be.
2. Very occasionally you may have to add up to 1 cup of matzah meal.

Instructions
Step 1
Separate the 3 eggs
Step 2
In a large bowl, beat the egg whites till they are stiff.
Step 3
Gently fold the yolks into the beaten egg whites.
Step 4
Gently fold the kosher salt and matzah meal into the beaten egg mixture.
Step 5
Refrigerate the mixture for 1/2 an hour.
Step 6
Remove mixture from the refrigerator.
Step 7
Wet your hands with cold water.
Step 8
Try to take 1 regular tablespoon of batter ( not a measuring spoon) and roll it into a ball. If you can make a ball, continue. If not, fold in more matzah meal then return batter to the refrigerator for another 15 minutes to a 1/2 an hour. DO NOT REFRIGERATE FOR ANY LONGER!!!
Step 9
Put up a large pot of boiling water with a tablespoon of salt. Form batter into balls and drop into boiling salt water for a half an hour or until balls float to the top of the pot.
Step 10
Add the matzah balls to your chicken soup when you reheat the soup to serve.
Step 11
Store leftover matzoh balls separately from the soup.
