Instructions
Step 1
Saute onion and green pepper in 1 Tablespoon of butter.
Step 2
Add diced tomato to warm.
Step 3
Remove the filling from heat and begin making omelettes.
Step 4
Crack the eggs into a small bowl and whisk.
Step 5
Add salt and pepper to taste.
Step 6
Heat the remaining butter in a non-stick frying pan and pour in the eggs.
Step 7
In the first 30 seconds of cooking, use a spatula to create 6-10 small cuts through the omelet.
Step 8
This allows the uncooked egg on top to flow down to the bottom of the pan.
Step 9
When the top is nearly set, sprinkle prepped filling and cheese over half of the omelet and turn off heat.
Step 10
Don't worry if some of the egg in the center isn't quite set, because the ambient heat will cook it.
Step 11
Use your spatula to flip the half of the omelet with no filling over the filled half and serve immediatt
Step 12
Top with roasted tomatillo sauce.
