Omelette
3eggs
1green chilli
2 tablespoononion
finely chopped
1 tablespoonfresh coriander
¼ teaspoonturmeric powder
¾ teaspoonsalt
or to taste

Instructions
Step 1
In a bowl add 3 eggs, onions, coriander, green chilli, salt, turmeric and mix
Step 2
Mash and mix the avocado with a pinch of salt, black pepper and red chilli flakes
Step 3
Toast your bread slices with butter
Step 4
On the same pan add more butter and olive oil and add the egg mixture
Step 5
Ensure egg mixture is spread evenly on the pan or skillet
Step 6
Cook for around 6 mins on medium low heat until bottom is set, then carefully flip
Step 7
After one minute fold the sides in so that it's shaped and fit to the size of your bread, then turn it over and press down gently and cook for around 20 secs
Step 8
To assemble, add cheese to the bottom slice and melt
Step 9
Then add the avocado mix followed by the omelette then drizzle some sriracha sauce
Step 10
Slice in half and enjoy
