Instructions
Step 1
Cut cucumbers in half lengthwise then in half widthwise.
Step 2
Smash section one by one then rough chop into bite size pieces
Step 3
Add about 1-2 teaspoons of kosher salt and set aside for 20 minutes this will extract the excess water as well as season it. Be sure to drain water afterwards
Step 4
Combine chili flakes, ginger/garlic, soy sauce, rice wine, sesame oil in a bowl and when excess water is drained from the cucumber combine
Step 5
Top with cilantro and sesame seeds
