For the edamame
For the carrots
For the green beans
For the rice
Instructions
Step 1
Start rice in rice cooker or cook according to package directions. I added a dash of ginger to my ancient grains mixture
Step 2
Preheat oven to 400 degrees
Step 3
Toss carrots with miso paste, gochujang, sesame oil, and sesame seeds and bake for 30 minutes
Step 4
Mix the miso paste, maple syrup, ginger, minced garlic, and chives together. Drizzle over the salmon.
Step 5
When there's 14 minutes remaining on the carrots, put the salmon in the oven.
Step 6
While the salmon and carrots are in the oven, toss your edamame with the sesame oil and red pepper flakes and heat up your green beans.
Step 7
Plate and enjoy!
