SPAGHETTI WITH MUSSELS

Instructions

Step 1
Clean the mussels under cold running water, scrubbing the shells well and removing the hairy beards. Discard any mussels that are already open.
Step 2
In a pan over medium heat, add your mussels, cover with a lid and let them cook for about 5 minutes or until they fully open. Remove any mussels that didn’t open.
Step 3
Remove the mussels from the pan, filter the liquid and pour it into a glass (we are going to use it later)!
Step 4
In a pan over medium low heat, drizzle some extra virgin olive oil, add chopped garlic and chilli and sizzle for a couple of minutes.
Step 5
Add tomato passata, your mussels juice, season with salt and pepper and simmer for about 20-25 minutes, stirring occasionally.
Step 6
Add your cooked mussels into your sauce along with half of your freshly chopped parsley.
Step 7
In the meantime, boil your spaghetti in some salted water until al dente, drain and add them to your sauce, adding some pasta water if necessary!
Step 8
Toss well over the heat to combine all the flavours together, adding a drizzle of extra virgin olive oil to make it super sexy!
Step 9
Serve with the rest of your parsley on top!
