Step 1
1. Separate the egg yolks from the whites.

2. Mix the ricotta, milk and yolks in a mixing bowl.

3. Blend the flour, baking powder and salt and mix it into the batter.

4. Whip the egg whites until fluffy and carefully fold them into the batter.

5. Melt a knob of butter in a frying pan over medium heat. Spoon the batter into the pan (making 8 pancakes altogether). Cook until golden on both sides.

6. Serve with maple syrup, fresh berries and vanilla ice cream.

1. Make the batter according to the basic recipe and carefully fold the blueberries into the batter.

2. Melt a knob of butter in a frying pan over medium heat. Spoon the batter into the pan. Cook the pancakes until golden on both sides.
