Instructions
Step 1
Make stir fry sauce, recipe below. (recipe here = 3 x recipe in A H )
Heat oil in skillet, medium heat, saute chicken until begins to brown
Step 2
Add stir fry sauce and mushrooms, sauce until chicken no longer pink in the middle
Step 3
Stir in broccoli, carrots, cabbage and snow peas.
Step 4
Reduce heat to medium low, cover and simmer, stir, until veggies are still bright but tender, 3 to 5 minutes. Add water as needed to stop sticking.
Step 5
Spread spinach on plates, spoon chicken on top of spinach. Leave excess liquid in pan.
Step 6
Boil liquid, reduce to medium low until sauce thickens.
Step 7
Pour on top of chicken, season with salt and pepper.
Step 8
Stir fry sauce recipe: 3" ginger, 3 cloves garlic, 3/4 cup water, 1/2 tsp or less salt, 3 TBSP sesame or avocado oil.
