Ingredients

Baked Fried Rice
1 ½ cupsBasmati rice
uncooked and rinsed thoroughly
2 cupslow-sodium chicken broth
2 tablespoonslight soy sauce
1 tablespoonoyster sauce
2 tablespooncooking sherry
4garlic cloves
finely minced
½ teaspoonwhite pepper
2 cupsfrozen diced vegetables
carrots, peas and corn mix, still frozen
¾ cupbacon
chopped, or ham
Marinated Chicken
1 poundboneless skinless chicken thighs
cut into 1/2 - inch pieces
1 tablespoonoyster sauce
1 tablespoonlight soy sauce
2 teaspoonssesame oil
1garlic clove
finely minced

Instructions
Step 1
Place all the baked fried rice ingredients, except the vegetables and bacon, in a 13x9-inch metal pan (not ceramic or glass). Shake to spread the rice evenly, ensuring all the rice is submerged under the broth. Sprinkle the vegetables evenly across the surface, then sprinkle the bacon on top. Cover with aluminum foil and bake in a preheated 400-degree F oven for 25 minutes.
Step 2
Meanwhile, place the marinated chicken ingredients in a bowl and mix well to combine. Set aside to marinate while the rice cooks.
Step 3
Remove the aluminum foil (reserve the foil), then spread the chicken in a single layer across the surface of the rice. Bake, uncovered, for 20 minutes.
Step 4
Remove from the oven, cover with the reserved aluminum foil, and rest for 10 minutes. Use a rubber paddle to turn the rice over and gently break it up. Add the scrambled egg (if using). Drizzle with sesame oil and sprinkle with the green onion. Gently toss the fried rice to mix it together, then serve!
Slow Cooker
Step 5
Do step 2 first and marinate chicken for 30 min at least
Step 6
Spray inside of crock pot with cooking spray. While chicken marinates combine all the rice ingredients into a crock pot and stir together. Turn crock pot on high.
Step 7
After chicken marinates, add it to the crock pot with the rice and stir together.
Step 8
Cover everything with parchment paper. Push the paper down until it touches the rice and chicken mix. Put on the lid.
Step 9
Cook on high 2-2.5 hours or low for 4-5 hours.
*You may need to stir part way through once or twice to prevent burning, especially on high
Step 10
When done, fluff with fork. You may also add a couple Tbsp of butter before fluffingf to help break up rice.
Step 11
When rice mix is done quickly scramble your eggs and cook in a skillet with butter and sesame oil and add to the rice when serving.
Step 12
Garnish with diced green onions
