Instructions

Step 1
Preheat oven to 400°
Step 2
Using a spoon and scoop out the interior of mushroom caps to create Bowls
Step 3
In a small bowl combine lemon juice soy sauce half of olive oil and brush onto both sides of the mushroom caps. Place into foil lined baking sheet and bake until soft about 12 minutes
Step 4
In a medium size bowl combine mozzarella tomatoes Italian seasoning garlic and remaining olive oil
Step 5
Divide cheese mixture evenly among the mushroom caps and bake until cheese is melted an additional 5 to 7 minutes
Step 6
Top with cilantro
