Ingredients

1 cupcrackers
finely crushed
0.5 stickbutter

8 ozcream cheese

8 ozTriple Crème cheese

½ cupBleu d’Auvergne

2 Tbspflour
¼ tspgarlic powder
¼ tsponion powder
¼ tspblack pepper

2watermelon radishes
peeled, thinly sliced
1 Tbspextra virgin olive oil
1 Tbsprice wine vinegar
or regular vinegar
1 Tbsphoney
1grapefruit
small, or orange
chives

walnuts

Instructions
Step 1
Preheat oven to 300 degrees.

Step 2
1. Add crackers into a blender or food processor and blend until it is finely crushed. Transfer to a bowl and add melted butter then mix to combine. Line a 6 inch springform pan with parchment paper and lightly spray with cooking spray. Add the crushed crackers to the pan and press into the bottom of the pan and along the sides of the pan to form a crust. Place in the refrigerator.

2. In a stand mixer, beat cream cheese and Triple Crème together until smooth. Add sour cream, onion powder, garlic powder, black pepper and mix. Add in one egg at a time and continue to mix until smooth. Sift or shake in flour and mix again. Your filling should be smooth and not too runny.

3. Add green onions and Bleu d’Auvergne cheese to the mixture and fold in to combine the ingredients.

3. Grab your crust from the refrigerator and then pour the cheese mixture into the pan.

4. Bake for 45-55 minutes until the cheese sets. The edges should be firm and the top is a little soft, not cracked. Turn off the oven and crack the door open. Let it sit in the oven for 1 hour then remove and let it cool. Refrigerate for at least 2 hours.

Peel and thinly slice the watermelon radish.
Step 8
Combine olive oil, rice vinegar, honey then stir and pour over the radish. Cut the grapefruit into thin slices and squeeze a tablespoon of the juice over the watermelon radish for an extra bit of citrus flavor.
Step 9
Top the cheesecake with slices of the watermelon radish (no dressing), grapefruit, dollops of triple crème cheese and sprinkle on the chives and walnuts.
