Tacos de Camaron Dorados (Fried Shrimp Tacos)

My version of the iconic Los Angeles favourite. Mariscos Jaliscos is a seafood food truck that serves the best fried shrimp taco in the state. The seafood is always fresh, and they always come out piping hot out of the fryer. When I’m home and I miss them, I make my own. I haven’t found any recipes for it so this is completely my own version.

Using a food processor is the easiest way to get all your ingredients uniformly sized. Add your shrimp, and pulse until the meat is chopped coarsely into bite sized chunks.

Remove the shrimp into a big bowl, and add your tomatoes into the processor. Pulse until it’s finely chopped. Remove the tomatoes, and add to the bowl with shrimp. Do this with all the ingredients listed, removing and adding to the bowl. When everything is done, season with a large pinch of salt and pepper.

Add the flour, and mix it all up well, until it looks like it’s sticky. This is important for the filling to stay inside the tortillas.

In the meantime, heat your deep fryer to 350°F. Warm your tortillas in the microwave for a few minutes, in a microwaveable container with a lid so they steam.

One by one, add 1/8 cup of filling onto half a tortilla, and fold over, pressing firmly. The filling should hold it closed.

Fry each taco, watching them carefully making sure they don’t open. Use a utensil if needed. Fry for 2 or 3 minutes until the shrimp is cooked and tortilla is crunchy.

For the salsa:

Step 7
Cut your tomatoes in half and add to a pot. Cook on medium until the tomatoes are broken down. Add to a blender, and purée until smooth.

Pour into a bowl, and add minced white onion and cilantro. Add chopped cabbage, and chilies.

Season with salt and pepper, and lime juice to taste.

Assembly:

On your plate, add 2 tacos, add thin slices of avocado on top to cover each taco. Pour the warm salsa on top, and a few dashes of hot sauce.
