For the soup
Step 1
In a baking dish add roughly chopped tomatoes, carrot, onion. Add three cloves of garlic and cover with salt, pepper and olive oil

Now, leave in the oven to roast for 30-35 mins.
Step 3
Once roasted, take out the garlic and add to a saucepan along with diced onions, vegetable stock and olive oil. Make the stock by mixing hot boiling water with the stock pots.

Give it a stir. Get out a hand blender and blend until smooth. Make sure to leave some texture in it.
For the cheese toastie different
Step 5
Lay out 4 pieces of bread and grate cheese on all.
Step 6
Now spread butter on one side of the sandwich.
Step 7
Place into a pan butter side down on high heat. On the side that isn’t covered in butter spread some on and flip.
Step 8
Put on a plate ready for serving and ladle soup into a bowl.
Step 9
Serve and enjoy! This makes a great leftover lunch!
