Vegetarian Wet Burritos

One day when trying to figure out what to make on Tuesday’s besides tacos, I came across wet burritos which I have never heard of before. I tried the recipe a coupe of years ago and have been making it ever since. I have made both vegetarian and non vegetarian versions of this recipe, but today I am sharing the vegetarian version which simple includes rice, beans and veggies.

Ingredients
8 servings
For the filling
2 x 14 ozcans navy beans
1 ½ cupsrice
cooked, I made cilantro lime
1red bell pepper
sliced
1green bell pepper
sliced
1yellow onion
sliced
mexican blend shredded cheese
sour cream
For the Enchilada sauce (recipe from “that’s Deelicious”)
Instructions
For the filling
Step 1
Cook your beans and your rice according to package instructions, or how you prefer. Slice and cook veggies. Add seasonings. *I used the same seasonings for my beans as I did my veggies*
For the enchilada sauce
Step 2
Combine flour and seasonings in a bowl. Heat sauce pan with oil and once the oil is hot put flour mixture in there and cook, stirring occasionally, for 2-3 minutes. Add tomato paste and mix. Add broth and mic until smooth and combined. Let simmer on low for 5-7 min, let cool, and serve!
