Instructions
Step 1
Fry the red onion, garlic and chilli together in a pan with a tbsp of oil.
Step 2
Add the cans of cherry tomatoes, sugar, salt and coriander. Combine well.
Step 3
Once the sauce is cooked and thickened, crack in the 4 eggs and cover with a lid to steam.
Step 4
Once the eggs have cooked, garnish with chopped coriander and serve.
