Instructions
Step 1
Rinse, cook, and full cool the rice for about 30 minutes at room temp then 4 hours in the fridge.
Step 2
Cook bacon until crispy. Remove bacon, and cook onions in the bacon fat.
Step 3
Add kimchi and kimchi juice, until it comes to a boil. Lower heat a bit and add any other diced vegetables, cook for a few minutes, until the sauce is nearly dried out.
Step 4
Turn to medium heat and add all cooked rice, with 1 tsp of sesame oil, and break it up with a rubber spatula. Cook, stirring, until the rice has absorbed the sauce and is very hot, about 5 minutes.
Step 5
Stir in 1 part (~1 Tbsp) soy sauce, 1 part (~1 Tbsp) fish sauce, and 1 part (~1 Tbsp) gocuhujang. Mix to combine. Once mixed, taste and adjust flavor as needed.
Step 6
Turn heat down slightly, but let the rice continue to cook, untouched, to lightly brown while you cook an optional fried egg.
Step 7
Once done, add in fresh chopped green onions and the cooked bacon. Top with an optional fried egg.
