Chicken Tortellini with Alfredo sauce and a side of green beans

Chicken filled tortellini (or raviolis) in a creamy alfredo sauce highlighted with tomato and spinach. Pair with a vegetable side such as green beans. A non-stick pan is recommended for the cheese sauce to make clean up much easier.

Instructions

Step 1
Boil 3 quarts of water and 1 Tbs of oil. Add pasta and continue on a low boil for 5-7 minutes. drain.
Step 2
In a 2qt non-stick sauce pot melt butter and cream cheese over medium. Whisk until soft. then add whipping cream. Continue whisking while this melts together.
Step 3
Add 2 cloved of pressed garlic, mushrooms, and seasonings to the cheese mix. Whisking smooth.
Step 4
Add parmesan cheese and cook on low-medium until it melts and thickens slightly. stir often.
Step 5
Heat remaining oil and garlic in a pan on medium and add spinach and tomatoes. cook until wilted, stir as needed.
Step 6
combine pasta, spinach and tomato mix, and toss with cheese mix.
Step 7
Steam green beans or side vegetable of your choice.
Step 8
Save leftovers in the refrigerator, reheat on the stove.
