Ingredients

300gsweet potato
peeled and sliced into small chunks
300graw beetroot
peeled and sliced into small chunks
0.5onion
roughly sliced
2garlic cloves
2 sprigsrosemary
100gmixed nuts
375gready to roll puff pastry
1egg
for eggwash
2 Tbspolive oil

Instructions
For The Wellington Log
Step 1
Add your sweet potato, beetroot, onion, garlic, and rosemary to one Air Fryer compartment and set the dial to roast for 10 minutes on 180C, until the vegetables are al dente.
Step 2
Remove the vegetables from the Air Fryer and add them to your food processor with some salt and pepper, and your nuts. Blend the elements until a rough paste has formed.
Step 3
Lay down a sheet of cling film on your kitchen surface. Place the beet mixture into the centre of the cling film and form into a log. Wrap it up and place it into the fridge.
For The Duxelles
Step 4
Add olive oil to a large saute pan and set over medium heat. Add the finely chopped onion and mushrooms and saute for 10-15 minutes until most of the liquid has evaporated. Season with salt and pepper. Set aside to cool.
Constructing Your Beet Wellington
Step 5
Remove the puff pastry roll from the fridge and leave to warm up for 10 minutes.
Step 6
Lay down your pastry and using a rubber spatula, cover evenly with a layer of duxelles.
Step 7
Remove your Beet Wellington log from the fridge, unwrap it out of its clingfilm, and place it at one end of the puff pastry/duxelles. Tightly roll the Beet Wellington up in the duxelles and puff pastry layer. Cut off any loose bits of pastry (keep these for toppings). Then, roll it up tightly in cling film and twist the ends to seal it completely and hold it in a nice log shape. Use any leftover pieces of pastry to cut out some cute toppings. Egg wash the underside of the cutout pieces of pastry and then stick them onto the top of the wellington. Set in the fridge for 30 minutes to ensure it maintains its shape.
Cooking Your Veggies & Beet Wellington
Step 8
Egg wash your beet wellington and then place it in one of your Ninja Air Fryer compartments.
Step 9
Place your vegetables to roast in the other Ninja Air Fryer compartment and drizzle with oil. Close both doors.
Step 10
Set the Air Fryer to ROAST for 20 minutes at 180C for the Beet Wellington compartment and 10 to 15 minutes at 180C for the vegetable compartment (giving them a shake halfway through). Press the SYNC button to ensure that your two compartments finish cooking at the same time.
Assembling Your Dish

While you're waiting for your Beet Wellington and vegetables, prepare your vegetarian gravy.
Step 12
Once your elements are all cooked, serve up with a generous portion of gravy, and enjoy!
