Step 1
Place your tortilla in a shallow dish and press it down to form the base of your quiche.
Step 2
Add your eggs and cottage cheese in, season with salt and pepper and whisk with a fork until creamy.
Step 3
Add your halved cherry tomatoes on top, sliced mushrooms, spinach and mozzarella and bake in the oven for about 30 mins or until nice and golden (180C/360F). Buon appetito!
