CARA CARA & BLOOD ORANGE SALAD WITH RICOTTA SALATA

This is one of those beautiful, timeless salads. ?e vibrant colors and sweetness of the oranges contrast perfectly with the salty ricotta. Change up the greens with more earthy fl avors, such as watercress and baby kale.

Instructions

Step 1
To peel the oranges, using a sharp knife, cut a thin slice of f both ends of the fruit to reveal the fl esh and stand the fruit upright. ?en, following the curve of the fruit, cut downward to remove the peel and white pith, rotating the fruit as you work until all of the peel and pith is cut away.
Step 2
Reserve the peels for another use, such as Candied Peel. ?inly slice the oranges crosswise.
Step 3
Arrange the orange slices in a shallow serving bowl. Top with the salad greens and sprinkle with the ricotta salata.
Step 4
In a small bowl, whisk together the blood orange juice and oil until blended, then drizzle over the salad. Sprinkle with pepper, toss gently, and serve immediately.
