Country Microgreen Omelet

Step 1
Melt the butter in a large skillet over medium-high heat. Add the bell pepper and cook, stirring, for 3 minutes. Pour the eggs into the skillet and cook, lifting from the bottom and allowing the uncooked portion to flow underneath. When the eggs are almost set, sprinkle evenly with the microgreens, cheese, tomatoes, and cilantro. Cover and heat just until the cheese melts. Remove from the heat and mound the sour cream in the center. Crumble the bacon over the omelet, season with salt and pepper to taste, and serve.
Note: For an omelet with a lighter consistency, stir 5 tablespoons of water into the eggs before cooking
